锡林郭勒草地样带食物消费特征及其影响因素分析

摘要:
[目的]文章以锡林郭勒草地样带上典型草地牧区、浑善达克沙地牧区和农牧交错区为典型区,分析锡林郭勒草地样带农牧户食物消费结构特征及其影响因素。[方法]通过开展农牧户入户调查获取问卷数据,开展典型农牧户食物跟踪调查获取农牧区食物消费季节变化数据,结合2015年全国土地利用数据、居民营养膳食结构宝塔(2016)和锡林郭勒盟经济社会数据,对研究区居民食物消费进行分析。[结果](1)农牧户食物消费以粮食、肉类、蛋奶为主,其中肉类消费以牛肉和羊肉为主。食物支出以蔬果、粮食和肉类为主,肉类消费量和肉类支出呈现倒挂现象; (2)食物消费量呈现季节变化,从夏季到冬季粮食消费量逐渐减少,肉类和蛋奶消费量增加,蔬菜消费量月际波动较大,水果、油类、饮料等消费量月际波动较小,食物中蛋白质、脂肪和能量摄取总量季节变化不明显; (3)区域间生产生活方式不同和文化习惯不同使食物消费结构沿样带呈现差异化,食物间互补性和闲暇时间增加引起了食物消费结构季节性变化。[结论]居民食物消费沿锡林郭勒草地样带由北向南呈现梯度变化,随着时间推移农牧户食物消费呈现季节变化,食物消费的主要影响因素包括生产生活方式、文化习惯、季节间食物互补性和闲暇时间。

FOOD CONSUMPTION FEATURES AND INFLUENCING FACTORS IN XILIN GOL GRASSLAND TRANSECT

Abstract:
This research is to study the characteristics of food consumption structure of farmers and herdsmen in Xilingol Grassland sample belt and its influencing factors. We took a typical grassland pastoral region, a Hunshandake sandy pastoral region and an agro pastoral transitional zone in the Xilin Gol Grassland transects as our study areas. Based on the data of questionnaire survey of farmers and herdsmen in 2017, food consumption tracking survey of typical farmers and herdsmen families from August 2017 to March 2018, national land use data in 2015, residents′ nutritional dietary structure pagoda (2016) and economic and social data of Xilingol League, we analyzed food consumption structure characteristics and influencing factors of farmers and herdsmen in Xilin Gol Grassland transect. The findings in this research showed: The food consumption of farmers and herdsmen was dominated by cereals, meat, and egg and milk, among which beef and mutton were the main meat consumption; food expenditure was mainly fruits and vegetables, cereals, and meat, while meat consumption and meat expenditure were reversed; Food consumption showed characteristics of seasonal changes, with cereals consumption decreasing from summer to winter, increasing consumption of meat, egg, milk. Vegetable consumption fluctuating month on month, and fluctuations in consumption of fruits, oils, and beverages less on a monthly basis. The seasonal changes in total protein, fat, and energy intake in food were not significant; Different regional production lifestyles and different cultures had differentiated the food consumption structure along the transects. The food complementarity and the increasing of leisure time had caused seasonal changes in the food consumption structure. The food consumption of residents along the Xilin Gol Grassland transects show a gradient from north to south areas. The food consumption of farmers and herdsmen show seasonal changes over time. The main factors affecting food consumption included production lifestyle, cultural habits, inter season food complementarity and leisure time.
